Preparing the barbecue
We believe that children should be involved in the preparation of the barbecue.
How else will kids ever learn the about the risks involved? Adult supervision is an absolute must, however.
Let the kids check to see if the barbecue is clean. If it’s a little rusty from last year, then get a bowl of soapy water and some cloths, and with the help of small hands they can have it clean in a short while.
Let your children pour on the coals, add the lighting material and show them how or even allow them (depending on their age) to light the barbecue from different points for an even burn.
Explain that the coals must be all white before cooking to be sure of well cooked food.
Food poisoning is the number one barbecue hazard. Food that is burnt on the outside and raw in the middle will do no-one any favours.
Homemade Vegetarian Burgers
Home made burgers always taste better than ready made, and this burger recipe to make with kids takes hardly any time at all to prepare. The secret is to source top quality ingredients. These burgers also freeze well, so any left over burgers can be saved and stored in the freezer for up the 3 months.
Serves 4
For the burgers
500g quality vegetarian mince (for example Quorn or soya)
1 red onion chopped finely
2 garlic cloves peeled, finely chopped
1 tbsp ketchup
1 tbsp wholegrain mustard
1 tsp Worcestershire sauce
Sea salt and freshly ground black pepper
A little olive oil for brushing

Lettuce (Iceberg)
Combine the mince, chopped onion, garlic, mustard, ketchup, and Worcestershire sauce. Season to taste (To check, fry off a little of mixture and taste.) Shape into 4 burgers. Place them on a tray lined with tin foil or grease proof paper, cover and put in fridge for about 30 minutes. This allows them to firm up.Now make the onion relish, fry the onions in the butter and season, then fry for 6-8 minutes until soft. Add the sugar and cook for 4-5 minutes until well caramelised. Drain off fat and add the balsamic vinegar. Cook for a further 2-3 minutes until the onions are sticky.
Now we are ready to start barbecuing! Brush the burgers with oil and place them carefully them on the grill of barbecue. Cook them for 8-10 minutes, turning once. Towards the end of cooking, place a slice of cheese on top of each burger. Let the cheese to melt down nicely for the last couple of minutes.
In the meantime, cut side of the bread rolls, add a little olive oil.To assemble the burgers, sandwich the burgers in buns, add some onion relish or mayonnaise and a few slices each of lettuce and tomato.
